I think most of the words that are troubling you are words that the maids use because they are speaking a dialect that is both Southern and what the American Heritage Dictionary  calls nonstandard, meaning that the language is considered unacceptable or inappropriate among educated speakers and writers.

 

 I prefer informal myself, since who gets to say what is above or below standard are the people who have the social power to do so. Throughout U.S. history, that has not been African Americans

 

Whether you call the language listed in the glossary nonstandard or informal, the real point is, you shouldn't use it in an academic setting, although you might well use it to write a novel, particularly one set in the South.
